Cottage Cheese Enchies
This is my mother's recipe. It's kind of a mashup of a recipe that she found on a blog or something and a recipe her coworker gave her like 20 years ago.
The Recipe
Ingredients:
Chicken
Sauce
Cottage Cheese
Instructions:
- Start by making a roux with the flour and oil. Once it does whatever a roux does, turn it off the heat.
- Open a can of tomato sauce and put it in the roux. Put the sauce back on the heat and stir until mixed. Then, add as much chili powder as your liking.
- Cut part of a rotisserie chicken into small-ish pieces. Cook the chicken with the water and taco seasoning. Depending on how much chicken you put in, you might have to adjust the measurements.
- After creating the sauce and the chicken, mix the cottage cheese and sour cream together.
- Cook the tortillas, and then assemble your enchiladas with the fillings. Pour the tomato sauce on top of the enchiladas.
- Cover the pan with aluminum foil and bake in the oven for ?? minutes at ??? degrees fahrenheit.
